Paleo Apple Berry Crisp Recipe
This recipe is super easy to put together and tastes surprisingly sweet despite not having any added sugar or other sweeteners. It is grain, gluten and added-sugar free and paleo and Whole30 compliant. It freezes well either before or after cooking and makes a great breakfast, snack or dessert. This dish is high in fiber, antioxidants and vitamins with added protein and healthy fats from the nut crisp. Vegan version included!
Ingredients
- 5 tart crisp apples – honey crisp, Macoun, granny smith
- 1/2 C dried blueberries, cranberries, raisins or cherries without added sugar
- 1 8-12 ounce jar of organic all fruit spread or jam with no added sugar – blueberry, raspberry, cherry, grape, etc.
- 1 C 100% fruit juice – cranberry apple, apple, cherry or a blend of your choice
- 1/2 C unsweetened coconut
- 1 C almonds, walnuts or pecans
- 1 tsp sea salt
- 2-4 ounces (1 package) freeze dried strawberries, blueberries or raspberries
- 1/4 C ghee, butter or coconut oil (use coconut oil for vegan version)
Instructions
- Pre-heat oven to 340º
- Slice apples into 12 sections and then slice in half width-wide and add to a large bowl
- Add dried fruit, all-fruit preserves and fruit juice
- In a food processor pulse the coconut, nuts and freeze-dried fruit until it resembles coarse breadcrumbs
- Melt butter/ghee/coconut oil and place in a small bowl; Add coconut, nut and dried fruit crumbs and stir to combine
- Put apple mixture into a 9×9 casserole or glass dish
- Cover with topping and bake at 340º for 45 minutes or until apples are soft and crisp is golden (if crisp begins to brown too quickly cover with foil and continue cooking until apples are soft)
