Apple Streusel Paleo Muffins
These paleo muffins are free from grains, gluten and dairy and are high in protein and healthy fats while being low in sugars and carbs. A great snack any time of the day!

Yield: 18 regular muffins
Ingredients
- 1.5 C finely shredded apple with the peel
- 3 organic large eggs
- 4 tbsp apple juice or cider
- 4 tbsp coconut oil, melted
- 1/2 C maple syrup
- 2 tsp vanilla extract or powder
- 3 C almond flour
- 3 tbsp coconut flour
- 1 tbsp cinnamon – divided
- 1 tbsp grated, pressed or minced fresh ginger
- 1/2 C pecans (optional)
- 1/3 C raisins (optional)
- 2 tsp baking soda
- 1/2 tsp sea salt
- 1/4 C dried apples
- 1/4 C raw almonds
- 1/8 C coconut or maple sugar
Instructions

Preheat the oven to 350°F and line a regular muffin tin with baking cups
- Whisk together the apple, egg, juice, coconut oil, maple syrup and vanilla extract/powder
- In a separate bowl, mix together the almond flour, coconut flour, 1.5 tsp cinnamon, baking soda and salt
- Gently mix the wet and dry ingredients together until just combined
- Stir in the raisins and pecans if using
- For the streusel: In a food processor with the blade attachment add the dried apples, almonds, coconut or maple sugar and 1.5 tsp cinnamon and blend until it resembles rough chopped crumbs
- Fill prepared muffin cups with the batter ⅔ full
- Top with the streusal topping
- Bake for 20 minutes or until a toothpick inserted into the center comes out clean
- Cook on a wire rack, store on the counter for 2-3 days, in the fridge for up to a week and in the freezer for up to 3 months
