Butternut Squash and Apple Soup with Cashew Butter Recipe
This paleo and vegan soup is full of flavor, vitamins, protein and healthy nut fats. Enjoy with a salad or crusty bread.

Ingredients
1 extra large, 2 medium or 3 to 4 small butternut squash, peeled and cubed
3 medium onions, chopped
5 Macoun apples, peeled and chopped
6 C chicken or vegetable stock
1 tbsp each: sea salt, pepper, onion powder, garlic powder and cinnamon
2 tsp fresh grated nutmeg
1/2 tsp allspice
1 1/2 C apple cider
1 C cashew butter
1 tbsp olive oil
Instructions
1. Sauté onions until translucent
2. Add stock and bring to a boil
3. Add apples, butternut squash and spices and cook until very tender
4. Purée with an immersion blender or beaters until smooth
5. Add cashew butter and apple cider and purée again
6. Adjust seasonings to taste
